° 12-13 soft flour 6-inch tortilla
° 2 pounds. ground beef
2 packets of taco seasoning
2C tomato cubes
1 c cubed red onion
1/2 C diced green onion
1/4 c chopped jalapeno, optional
° Kosher salt to taste
2°C heavy whipping cream
1/2 stick of butter
3°C taco cheese or shredded Mexican cheese
1.5 teaspoons of Cajun seasoning
° Sour cream decorations
° Green onion garnish cubes

In a small bowl, combine red onions, green onions, jalapeños, tomatoes, and salt to taste. sit aside.
In a large skillet, brown the meat, dumping off the grease. Add taco seasoning and stir.
In a medium saucepan, boil the heavy cream and butter, stirring, until thickened. Removing from heat and adding 2 cups of cheese. Adding Cajun seasoning and keeping warm.
In a 9" x 13" casserole, layer 4 tortillas (cut to fit in bottom of casserole), ground beef, cheese and tomato mixture. Repeat up to 3 layers with cheese sauce on top.
Add another cup of cheese on top of a whole casserole.
Place in a covered 400° oven for 20 minutes, then remove and let cool. Each serving is garnished with sour cream and green onions.
